Yoghurt

Yoghurt has many uses in Indian cooking for example in raitas, as a marinade for tandoori chicken and drinks such as lassi. Yoghurt can be added to curry for a milder flavour and taste, for example in kormas.

A favourite Indian dessert is Shrikhand where yoghurt is first strained to remove excess water and then combined with saffron and cardamom seeds for a delicious dessert.
