Coconut Milk, Creamed coconut

Coconut milk comes from the extracted flesh of grated coconut and should not be confused with the liquid inside the coconut, often referred to as coconut water. To prepare coconut milk, soak the flesh in hot water (600 ml/1pt) for about an hour and then blend until it is pureed, strain the liquid, you can now use this coconut milk where it is required in a recipe. You can also buy coconut milk from most stores.

Creamed coconut can be bought from most supermarkets and is sold in solid blocks. Use the coconut cream, as required which, can be added directly to your curry or diluted as per your recipe.
