Kidney Beans

Kidney beans a variety of the common bean and get their name because of their shape.

Fresh kidney beans must be soaked for several hours, drained and then rinsed before bringing to the boil for at least 10 minutes to destroy the toxins. The kidney beans should then be boiled for a further 45 minutes to an hour before preparing them for use in a recipe.

‘Rajma’ is a very popular Indian dish; the kidney beans are cooked in a tomato sauce made with onions and spices. It is important to remember that when using canned kidney beans to thoroughly rinse them before using in a recipe.
