Mustard Seeds (Rai)

There are three different types of mustard seed from the mustard plant: the black mustard seed and brown mustard seed which is mostly used in Indian cookery (rai).

Mustard seeds can be used either whole or ground and adds to enhance flavour to many fish dishes, this can be further enriched with a small amount of mustard oil. Mustard seeds are also used in vegetable dishes such as stir-fried cabbage.

The yellow mustard seeds are often used when pickling and you make your own mustard.
