Fenugreek (Methi)

Fennel seeds are small, rectangular in shape and a dull yellow in colour, they have a mild but slightly bitter taste and are only used in very small quantities. Fenugreek seeds are also used in a ‘five spice mix’ (panch phoran); which is often used for fish and/or vegetables dishes. These spices are different to those used to make ‘Garam Masala’.

The leaves of the herb (methi) have a distinctive flavour and are often used in meat or vegetable dishes; they can be used fresh or dried. Dried fenugreek powder can be ground to a powder and added to the marinade of chicken tikka, for example.
