Okra (Bhindi – Indian)

Okra is a long and slim pod-like vegetable that should be washed and dried thoroughly before being prepared to cook and not after in order to avoid it becoming sticky and slimy when cooking.

The best okra to buy is when the vegetable is very young as they are more tender and crisper; okra that is small and medium in size are better. The large sized okra can be very stringy and tough; also, the seeds have grown too big and are hard; they are not enjoyable to eat when cooked.

This is a very popular vegetable in Asian cooking.
