
200 g Greek yoghurt
½ large, unpeeled cucumber
15 g mint
½ tsp salt or to taste

Slice and quarter the cucumber, sprinkle with salt and leave to drain, as the salt causes the cucumber to release moisture

Mix the yoghurt

Chop the mint and the coriander finely and add to the yoghurt, then add the cucumber and stir gently to combine the ingredients together.
