Chicken kebabs

 500 g chicken mince (breast and thigh)
 1 medium onion, chopped
 1 tsp garlic paste
 1 tsp ginger paste
 1 tsp ground cumin
 ½ tsp ground coriander
 ½ tsp red chilli powder
 ½ tsp garam masala
 1 tsp salt
 1 egg, beaten
 50 g fresh breadcrumbs
 2 green chillies (de-seed for less heat)
 2 tbsp coarsely chopped coriander leaves
 sunflower oil

Put the chicken, onion, garlic and ginger paste, chopped green chillies, coriander leaves, breadcrumbs, salt, beaten egg and all the dry spices into a bowl or food processor, combine all the ingredients until it is mixed together thoroughly.

Put a small amount of sunflower oil on to your fingers, then divide the chicken mixture into 12 portions and flatten to form into a burger shape.

Put 2 tablespoons of oil in a non-stick frying pan over a medium-high heat. When the oil is hot add the kebabs to the frying pan and fry the kebabs for 5 minutes on each side, turning frequently until golden brown and cooked through.

Serve hot with a mixed salad.
