
Cut the potatoes into chunks and boil for 20 minutes until they are cooked then drain and mash the potatoes to a coarse texture and put aside.
Chop the onions and heat the oil in a frying pan, add the onions and fry on a high heat until they are soft and translucent, then add the whole cumin seeds and fry for 30 seconds, stir and do not allow them to burn, reduce the heat.
Then add the red chilli powder, cumin powder, salt and chopped tomato, fry briefly, then add the mashed potatoes and fry on a high heat stirring the potatoes to ensure the spices have spread evenly through the mashed potato.
Once the mashed potatoes have been fried sufficiently reduce the heat and add the lemon juice, the green chillies along with the chopped green coriander leaves and toss all the ingredients well together
Ensure the dish is hot, then serve.
Delicious with parathas or chapattis.
