
Soak the desiccated coconut in enough water to cover before cooking, this prevents the coconut from burning on contact with the oil.
Heat the oil in a large pan, add the onions and fry until the onions have softened, add the salt.
Add the cooked rice, the soaked coconut (this will have absorbed all the water) and fry over a medium heat mixing the rice gently until the rice is hot.
Check the seasoning and serve hot.
